Instructions
Step 1
Cook rice with broth according to instructions
Step 2
Season and cook chicken like normal

Cook quinoa with broth according to package instructions
Step 4
Prep spinach, peel oranges, measure out cranberries and nuts and put them in the bottom of a giant bowl. Prep fresh thyme and garlic.
Step 5
Mix olive oil, garlic, thyme, rice vinegar to make a dressing. Season with salt and pepper to taste.
Step 6
Just before serving, add rice, quinoa and dressing into the giant bowl and mix with tongs. Remove chicken from pan and slice nicely. Spoon rice-quinoa mixture onto serving plates and put sliced chicken top of the rice.
