2bell peppers
diced small

1 cupcorn

1 cuptoasted slivered almonds

¾ cupcurrants

½ cupparsley
chopped

¼ cupbasil
chopped

2 cupsorzo
dry

2 cupswild rice
dry
Dressing
Instructions
Step 1
Cook orzo and wild rice according to their packages. Let cool.
Step 2
In a large bowl combine cooked orzo, cooked wild rice, diced bell peppers, corn, currants, minced parsley, and minced basil. Mix until well combined.
Step 3
Blend together red wine vinegar, olive oil, lemon juice, garlic, parsley, basil, honey, oregano and salt until emulsified.
Step 4
Pour the dressing over the orzo and wild rice mixture, mix well. Add pepper to taste. Before serving mix in the toasted slivered almonds. Enjoy!
