Healthy Black Cocoa Holiday Muffins

These healthy holiday muffins are fudgy, decadent and super easy to whip up. They have a black cocoa base, a matcha cashew frosting and a gorgeous chocolate christmas tree on top.

1 CupMedjool Dates
Soaked in hot water in 5 minutes, drained and diced
1 cupalmond meal
1 cupoat milk
½ cupchickpea flour
½ cupdesiccated coconut
¼ cupcacao powder
¼ cuptahini
0.25 CupRice Malt Syrup
or choice of liquid sweetener
2 TbspBlack Cocoa
2 TbspSea Moss

1 ½ tspbaking powder
1 tspvanilla extract

Matcha Frosting
0.75 CupCashews
Soaked in hot water for 10 minutes and drained
⅓ cupoat milk
2 TbspSea Moss
Green Warrior
2 tspmatcha
1 tspvanilla
Chocolate Trees
Instructions
Step 1
Preheat oven to 180°C and grease a 6-hole muffin tray.
Step 2
Mix all muffin ingredients together, starting with dry ingredients and adding the wet. Transfer to the muffin tray (makes 6) and bake in the oven for 35-40 minutes, or until skewer comes out clean. Allow to cool completely.
Step 3
Blend all matcha cashew cream ingredients together until smooth. Set aside in the fridge.
Step 4
Pour melted chocolate into a piping bag or ziplock bag (and chop corner off). Line up the skewers and pipe chocolate in a zig zag motion over each, increasing in size as you move down to form a tree. Sprinkle over desiccated coconut and set in freezer for 5-10 minutes.
Step 5
Frost the muffins and garnish with the chocolate tree. Optionally sprinkle over extra coconut or matcha. Enjoy! Store in the fridge for 4-5 days.
