Ingredients

For the Cauliflower
1 ⅓ cupwater
1 ⅓ cupall purpose flour
2 ½ tspgarlic powder
29 ozcauliflower florets
small pieces
15 ozchickpeas
canned no salt added, drained and rinsed
¾ cuphot sauce
1 Tbspunsalted butter
melted
For the Pitas
Instructions
Step 1
Preheat the oven to 450°F. Lightly spray a large non-stick baking sheet with oil.

Step 2
Combine the water, flour, and garlic powder in a bowl and stir until well combined. Coat the cauliflower pieces with the flour mixture and place on the baking sheet; bake for 20 minutes.
Step 3
While the cauliflower is baking, combine the hot sauce and butter in a small bowl.
Step 4
Remove pan form oven the add the chickpeas, stir. Pour the hot sauce mixture over the baked cauliflower and chickpeas then continue baking for an additional 5 minutes.
Step 5
While the cauliflower is baking. Saute onion, carrot, and garlic over medium 3 to 4 minutes, stirring occasionally and adding water, 1 to 2 Tbsp. at a time, as needed to prevent sticking. Season with pepper the combine with cauliflower and chickpeas.
Step 6
Place one lettuce leaf in each pita half, then fill pitas with cauliflower mixture and top with celery. Serve with additional hot sauce, if desired.
