G - Lamb Doner, Garlicky yoghurt & Chilli Sauce

Make the table go, "phwoar!" with this delicious homemade doner. You'll top warm pitta breads with British lamb mince, lettuce and tomato, and drizzle with chilli sauce and garlicky yogurt sauce to serve. Yum!

Instructions

Step 1

Preheat the oven to 220°C/ 200°C (fan)/ Gas 7
Step 3
Peel and finely chop (or grate) the garlic
Step 4
Peel and grate half the red onion
Step 5
Slice the remaining red onion finely and set aside for later
Step 6
Add the lamb mince to a bowl with the egg, panko breadcrumbs, ground cumin, ground coriander, smoked paprika, dried oregano, and grated red onion
Step 7
Add 1/2 tsp salt and half of the chopped garlic (save the rest for later!) and mix thoroughly until fully combined (clean hands is the best way!)
Step 8
Cut 2x A3 size sheets of non-stick baking paper (A3 = 16.5 x 11.7 inches).
Step 9
Put the lamb mixture between the two sheets and using a rolling pin, roll it out until approx. the thickness of a pound coin (between a quarter & a nickel).
Step 10
Peel off the top baking sheet and transfer the rolled lamb to a large baking tray

Add the tray to the oven for 18-20 min or until cooked through and browned

Whilst the lamb is cooking, wash and finely shred the little gem lettuce

Slice the tomato into wedges
Step 14
Combine the remaining chopped garlic (not a fan of garlic? Just add a little!) to a bowl with the yoghurt, a pinch of salt and a little pepper – this is your garlicky yoghurt sauce.
Step 15
Add the red chilli paste (can't handle the heat? Go easy!) to a bowl with the tomato paste, white wine vinegar, 2 tbsp cold water and a pinch of salt and sugar

Give it a good mix up – this is your chilli sauce

Once the lamb is almost done, add the pittas to the tray and return the tray to the oven for 3-4 min or until warmed through
Step 18
Once the lamb has browned, remove from the oven and pat dry with kitchen paper
Step 19
Transfer the lamb to a clean board and slice into long strips – this is your lamb doner meat
Step 20
Top the warmed pitta with a handful of shredded little gem, lamb doner meat, red onion slices and tomato wedges
Step 21
Drizzle over the garlicky yoghurt and chilli sauce (not a fan of spice? Just add a little!) and serve.
