Step 1
Heat olive oil in a large pan on medium heat, add the chopped bell pepper and onion and cook for 5 minutes until the onion has softened
Step 2
Add garlic and cook for an additional minute
Step 3
Add the tomato paste and mix it with the rest of the ingredients
Step 4
Add some oil in the middle of the pan and add your spices for 30 seconds or until fragrant
Step 5
Add the tomato and some salt and pepper, bring the sauce to a simmer and cover with a lid for about 8 minutes or until tomato is cooked
Step 6
Use a large spoon to make small wells in the sauce and crack your eggs into each well, add some salt and pepper to each egg and cover the pan for about 5 minutes
