SALMON + BROCCOLI FRITTERS

Ingredients
14 servings

150gbroccoli crown
2 x 213gtins of salmon
drained, and any big bones and skin removed

2eggs

2 Tbspplain flour

1 tspdried dill

1lime
grated zest of and juice of 1/2

black pepper

coconut oil
for frying salad, to serve

salt

green salad
to serve
Instructions
Step 1
Cook the broccoli in a saucepan of salted boiling water for 2 minutes, then drain and leave to steam dry for a minute or two. Blitz in a food processor until finely chopped then empty into a bowl.
Step 2
Add the salmon, eggs, flour and dill to the food processor along with the lime zest and juice. Blitz until smooth. Transfer the mixture to the bowl of broccoli and season to taste with a little salt and pepper.
Step 3
Heat a little coconut oil in a frying pan over a medium heat and spoon in tablespoons of the mixture, flattening each tablespoon down a little and cooking for 2-3 minutes before flipping and cooking for a further minute. Continue until all the mixture is used up. Cut the remaining half lime into wedges and serve on the side, with a salad.
