for the pesto
Instructions
Step 1
cook the pasta in boiling salted water for 8 to 10 minutes
Step 2
drain and set aside
Step 3
toast the pine nuts in a hot, dry pan
Step 4
blitz all the pesto ingredients together in a blender
Step 5
it may seem like theres not enough liquid, but the moisture in the herbs themselves helps the pesto come together
Step 6
this should take 3 to 4 minutes
Step 7
season with salt and pepper
Step 8
transfer the cooked pasta into a large serving bowl
Step 9
add the grated courgette and pesto, then toss to combine and coat
Step 10
top with the torn basil leaves and toasted pine nuts
