Mutabbal Batata is a traditional Lebanese Mezza or side dish, it is completely vegetarian but for more veggies and color we add sweet green peas.

Instructions
Step 1
Put the potato in a boiling salted water with 4 cloves garlic, boil about 15 minutes or until fork-tender, remove the potatoes, set aside.
Step 2
Meanwhile rinse thawed peas Rinse the peas, blanch in boiling water with a pinch of salt for about 4 minutes or until become crisp-tender, 2 to 3 minutes, but reserve ½ cup of the boiled water, transfer the peas into the an ice water. This will stop the cooking process. Let them sit for 3-5 minutes and reserve also some of the peas for garnishing.
Step 3
Mash the potato and peas by fork or masher, (Do NOT puree in food processor). Place in a bowl and using a fork stir in olive oil, one tablespoon at a time, add 2 clove finely minced garlic, salt, pepper, mint leaves, lemon zest, lemon juice and hot water, one tablespoon at a time, stir until desired consistency, taste and adjust the lemon and salt as desired.
Step 4
To serve, in a bowl or serving plate, create a well with the back of a spoon, and drizzle olive oil in the well, sprinkle with reserved peas and chopped mint, serve garnished with the remaining peas and mint leaves alongside toasted pita bread, pickled cucumber or green salad
