There are many things I miss since going plant based. One that kept running through my mind are gyros. So I started making Falafels, and it was a perfect replacement. I made up a batch of vegan naan bread from veganricha.com, a vegan tzatziki and a Greek salad. I was a great dinner for the whole family. This recipe is low salt, and low protein.

Step 1
Add all ingredients through the olive oil into a food processor. and process on high. Pour in a the quinoa flake, and process to combine. Transfer to a bowl, and chill in the refrigerator for at least an hour.
Step 2
Once it has chilled for an hour, take mixture and for into 2 inch balls. Place in the air fryer basket. Cook for 12 to 15 minutes at 375 degrees.
Step 3
Serve in Pita bread or Naan with garnishes of your choice. Top with a vegan tzatziki and/or hummus. Pair with veggie packed Greek salad.
