Instructions

Step 1
Trim the edges of cucumber and cat them in half. Then each half cut in half at a 45 degree angle, so you get 8 pieces.
Step 2
Scoop out the flesh, using tsp from the angle side of cucumber. Be careful to not go all way through.
Step 3
Fill in the cavity with 1 tsp of hummus, arugula leaves, carrot and radish .
