Instructions
Step 1
Place giblets in a large open kettle with 2-3 quarts water. Bring to a boil and add 2 chopped onions, salt, pepper and garlic. Lower heat and cook until giblets are done.
Step 2
Drain giblets and finely chop. Reserve liquid.
Step 3
Using broth from giblets, cook rice by your favorite method.
Step 4
Using a large pot, make a roux of oil and flour.
Step 5
Add remaining chopped onions, celery, salt, black pepper, red pepper, adjusted to your families taste, chopped giblets and enough broth to make the consistency of a thick gravy.
Step 6
Add cooked rice, chopped green onions and parsley.
