Instructions

Step 1
Butterfly chicken breast and pound to even thickness
Step 2
Season chicken with salt and pepper. Dredge chicken in flour and shake off excess.
Step 3
In a large skillet over medium head add half of your butter and olive oil
Step 4
When butter and oil are hot and ready add your chicken cook 3-4 minutes per side till brown
Step 5
Remove chicken from pan and set aside
Step 6
Add lemon juice, chicken stock, and capers to pan scrape the brown bits from the bottom of pan and bring to boil
Step 7
Check sauce for seasoning return chicken to pan and simmer for 5 minutes or until chicken reaches 165
Step 8
Remove chicken and remaining 2 tbsp of butter to pan and whisk quickly
Step 9
Pour sauce over chicken to serve top with chopped fresh parsley as desired
