These CRUMBL inspired strawberry shortcake cookies are made using strawberry cake mix then topped with a smooth vanilla mousse and strawberry shortcake streusel

Instructions

Preheat oven to 350°F

Step 1
Line baking sheet with parchement paper; set aside.

Strawberry Shortcake Streusel

Step 2
In 2 sm. bowls, add 2T flour & 1T butter to EACH. Add the jello in one & the pudding in the other bowl.
Step 3
Using 2 forks, mix contents of each bowl until combined & crumbly looking. Pour the strawberry jello streusel on one side of a baking pan & pour vanilla streusel on the other. Bake in the preheated oven (11 min.)
Step 4
Let streusel cool down completely while making cookies; gently mix to get vanilla & strawberry flavors combined together.
Step 5
In lg. bowl, add strawberry cake mix, flour, oil, eggs, & cream; mix until dry cake mix disappears.
Step 6
Using lg. cookie scoop, portion out 8 equally-sized cookie dough balls.
Step 7
Bake (9 min.) Cool cookies on baking sheet (15 min.); transfer to cooling rack.

Vanilla Mousse Frosting

Step 8
In mixer bowl using paddle attachment, mix cream cheese until smooth & lump free. Add cream, vanilla pudding, & powdered sugar; mix using a whisk attachement until it thickens (60 sec. on medium-high.)
Step 9
Transfer frosting to piping bag with lg. piping tip frost cooled cookies. Top frosting with strawberry shortcake streusel & enjoy!
