Instructions
Step 1
Preheat oven to 180 C and grease a round cake tin
Step 2
For the topping - in a large bowl, cream the softened butter and brown sugar together until creamy. Spread over the base and quarter of the way up the sides of round cake tin
Step 3
Arrange 4 pineapple rings on the top (reserving syrup for later), then place 4 of the glace' cherry halves in the centre of each pineapple ring. Set aside
Step 4
For the cake - in a large bowl cream the butter and sugar with an electric mixer. Add the vanilla, eggs and pineapple juice. Gradually add flour. Mix well until combined
Step 5
Spoon cake mixture on to[p of pineapple and spread it evenly
Step 6
Bake for 30-35 minutes
Step 7
Leave the cake to rest for 5 minutes, then turn out onto a plate
