1.5 lbsboneless skinless chicken breasts
diced into 1-inch pieces

1 Tbspcornstarch
divided

2.5 Tbspolive oil
divided

Salt

white pepper
or black

½ cupchicken broth

3.5 Tbsphoisin sauce

1.5 Tbspsoy sauce

1.5 Tbsprice vinegar

1 Tbsphoney

½ tspsesame oil

4green onions
chopped, plus more for serving if desired

4cloves garlic
minced

1 Tbspfresh ginger
finely grated, peeled

2 cupsbroccoli florets
diced, small pieces

1bell pepper
medium, chopped

¾ cupunsalted cashews
roughly chopped

Sesame seeds
for serving, optional
Instructions
Step 1
* Toss chicken with 1 Tbsp cornstarch then cook half and time in skillet, transfer.
Step 2
* In a bowl whisk chicken broth, hoisin sauce, soy sauce, rice vinegar, honey, sesame oil and remaining 2 tsp cornstarch until well blended.
Step 3
* Saute green onions, garlic, ginger, broccoli and bell pepper.
Step 4
* Pour in sauce mixture and cook until thickened.
Step 5
* Stir in cooked chicken, veggies and cashews. Serve over rice with green onions and sesame seeds.
