Instructions
Step 1
Brown ground turkey in a large skillet on medium high heat. Add onion, spinach, and peppers, stir in well.
Step 2
Combine all the remaining herbs and sprinkle evenly over meat.
Step 3
Reduce heat and add water and allow to simmer until reduce. About 3 minutes.
Step 4
Whisk eggs in a small to medium bowl and pour over meat mixture. Stir until combined well and cook on medium/ low heat until eggs are cooked
Step 5
Spoon egg and turkey mixture over tortillas and top with cheese and Tapatio
