Dinner time is the perfect time to load up on veggies. A dinner sized salad does the trick! This salad is so versatile, you can swap ingredients in and out and you'll have dressing leftover for use throughout the week.

Ingredients
4 servings
6 cupsromaine lettuce
chopped
2 cupsbaby spinach
4eggs
hard boiled
½ cupbacon
cooked, low sodium- crumbled, optional, substitute with 1 cup of chopped walnuts or almonds
1avocado
cut into chunks
1 cupcorn
1 cupcherry tomatoes
cut in half
2 cupschicken
cooked, or substitute with 2 cups of chickpeas, drained and rinsed
Dressing
Instructions
Step 1
Whisk dressing ingredients together (store leftover in the fridge for up to 5 days)
Step 2
Toss greens with some dressing. Add salad toppings except eggs. Add eggs at the end so they don’t get broken up.
