Instructions
Step 1
Warm the milk in a pan, at very low fire. It should not boil.
Step 2
Split the eggs yolk and egg white
Step 3
Whisk the egg yolks and gradually add 6 spoons of brown sugar. Do it 20-25 minutes.
Step 4
From the warm milk add 100 ml to the egg yolk mixture. Continue mixing for 2 minutes. Add the mixture to the milk.
Step 5
*TRICKY PART* continue warming the milk in low fire. Make sure to keep moving it with a spoon. Do it for 10-15 minutes.
Don’t stop moving it and make sure the fire is very low, otherwise the egg will cook.
Step 6
Transfer the mixture to a new container. Add the cinnamon, ginger, nutmeg and cloves. Stir it!
Step 7
Add the rum and heavy cream to the mixture. Transfer it to a bottle and leave it in the fridge
Step 8
Whisk the egg white and add 1 spoon of brown sugar. Beat it for 10 minutes.
Serve
Step 9
Serve in the glass of ice until the ice is covered. Add 1 or 2 spoons of egg white mixture to cover the glass. Garnish with cinnamon and nutmeg.
