2 cupsbrussel sprouts
1 HeadBrocolli
1butternut
1can chickpeas
spinach
yellow onion
olive oil
garlic salt
pepper
Balsamic Glaze
Instructions
Step 1
Preheat oven 190degrees
Step 2
Chop all Vegs and add to baking tray. (Expect the spinach) Coat with Olive Oil. Bake for 25 minutes or until golden brown
Step 3
Add balsamic vinegar and coconut sugar to small saucepan. Bring to boil and then simmer until balsamic reduces by half. About 10 minutes.
Step 4
Place Spinach at the bottom of the bowl, add the veggie mixture and top with balsamic glaze.
