Ingredients

1 x 10 ozfrozen chopped spinach
pkg
1 ½ cupegg substitute
or whole eggs
1 ½ cupcheese
shredded, reduced fat
½ cupbell pepper
diced
¼ cuponions
diced
Instructions
Step 1
Microwave spinach on high for 2 1/2 minutes to thaw. Drain the excess liquid. Line 2, 12 cup muffin pans with foil baking cups. Spray the cups with cooking spray. Combine all ingredients and mix well. Divide among the muffin cups. Bake at 350* for 20 minutes or until a knife inserted in the center comes out clean.
