Instructions
Step 1
1. Peel and cut the potatoes into large equal sized chunks.
Step 2
2. Add them to a pot and cover with cold water and add a generous heap of salt.
Step 3
3. Bring to a boil uncovered over high heat.
Step 4
4. Cover and simmer on low heat for about 30 minutes or until fork tender. The fork should go through the potatoes easily without breaking them.

5. Drain the potatoes in a colander and cover with a cloth to steam for 5 minutes.

6. Preheat your oven to 180°C/350°F.
Step 7
7. Pour the olive oil into a roasting pan. It should cover the bottom of the pan completely. If your pan is too big add a bit more oil to cover it.

8. Place the pan in the oven for 10-15 minutes or until the oil is very hot.

9. Toss the potatoes in the colander until they form a thick layer of potato around them that resembles mashed potato. (See video)

10. Carefully add the potatoes and place them in the pan of oil.
Step 11
11. Roast in the oven for about an hour or until you’re happy with the colour, turning every 20 minutes with a spoon or spatula.
Step 12
12. In a small pan melt the butter then add parsley and garlic and cook on medium heat for 2 minutes.
Step 13
13. When the potatoes are ready add the garlic butter and parmesan cheese and toss.
Step 14
14. Season with salt and pepper to taste and serve.
