Put your cauliflower into a food processor and make into cauliflower rice. Put mucilin or cheesecloth (or even an old clean tshirt!) into a Bowl and pour your cauliflower in sprinkle thoroughly with salt mix well and let sit for 20 minutes. Pick up your cloth with cauliflower inside and ring it out until you can't get any more moisture out. Put your drained cauliflower back into the bowl and mix in ½ cup of the mozzarella and all your other ingredients except the tomatoes and chiffonade, then line a flat pan with parchment paper and spread your mixture out patting it into a circular shape it should be about 14 inch or so really depends on how big your head of cauliflower was. Bake at 400 degrees for 20 minutes. Take it out of the oven top it with your roma slices, chiffonade and the rest of your mozzarella and bake it for another 10-15 minutes.
