Instructions
Step 1
Chop up the carrots then blend them up, place to the side
Step 2
Add olive oil to hot pan
Step 3
Sauté onions and garlic
Step 4
Add Arborio rice and toast for 3 mins
Step 5
Add chicken stock to small sauce pan, bring to a boil then simmer
Step 6
Add ladles of chicken stock to rice slowly until rice is cooked and creamy
Step 7
Add the carrot purée towards the end and mix in
Step 8
Add butter, pepper, and Parmesan cheese
Step 9
Add peas if you want then serve!
