Instructions
Step 1
Preheat oven to 350 degrees

Step 2
In skillet, cook bacon until done. Drain grease into bowl for use in next step.
Step 3
Pour a decent amount (seriously, measure it with your heart) of bacon grease into a cast iron Dutch oven, and heat over medium high heat. Once hot, throw in the garlic. Stir and cook until your kitchen smells like a vampires worst nightmare. Then add the paprika, cayenne, onion powder, and chipolte powder.
Step 4
Lower heat to medium-low, and slowly add 2 tablespoons of flour, stirring gently and consistently until combined with bacon grease (It should be thick).
Step 5
Slowly pour in milk, continuing to stir
Step 6
Slowly bring milk to a boil. Don't heat the milk too quickly or it could curdle. I usually go no higher than a medium heat, and stir it every minute or two.
Step 7
Remove from heat. Add half of the noodles and cheese, mix until combined, then add the remaining noodles and cheese, stir until combined.
Step 8
Top with fried onions and bake for 10-15 minutes, or until cheese is bubbling.
