Instructions

Truffle mayo

Step 1
Chop the truffle.
Step 2
To a bowl add the mayonnaise, truffle and truffle oil. Mix until well combined

Chicken

Step 3
Chop the basil, cut the tomatoes and slice the chicken breast.
Step 4
Heat the oil in the pan. Leave the heat on high. Add the chicken. Fry for 3-4min. Season with salt and pepper.
Step 5
Add the tomatoes and basil. Fry for another 2 minutes.

Sandwich

Step 6
Cut the bread in half. Spread both sides with butter. Toast until golden brown.
Step 7
Spread the bottom half with the truffle mayonnaise. Place the arugula, chicken and tomatoes on top.
Step 8
Stack the other bread half on top and enjoy!
