Ingredients

2 lbsboneless skinless chicken breasts
cut into thin slices
2cloves garlic
minced
fajita seasoning
3 Tbspolive oil
1red bell pepper
sliced thin
1yellow bell pepper
sliced thin
1green bell pepper
sliced thin
1yellow onion
medium, halved and sliced from top to root
2 Tbsplime juice
3 tabcilantro
chopped
flour tortillas
small, for serving

Fijitas Seasoning
Instructions
For Tonight's Dinner
Step 1
For the seasoning: In a small mixing bowl whisk together chili powders, cumin, paprika, coriander, 1 1/2 tsp salt and 1/2 tsp pepper, set aside.
Step 2
For the fajitas filling: Spread bell peppers and yellow onion onto baking sheet.
Step 3
Top with chicken strips then sprinkle garlic and seasoning evenly over chicken strips.
Step 4
Drizzle olive oil over top then toss everything to evenly coat. Spread into an even layer working to keep chicken from overlapping.
Step 5
Roast in preheated oven, tossing once halfway through cooking, until veggies are tender and chicken has cooked through, about 18 - 25 minutes (test a few of the larger pieces to make sure they are 165 in the center).
Step 6
Wrap tortillas tightly in foil and warm in oven during last 5 minutes of fajita filling cooking.
Step 7
Drizzle lime juice evenly over top of the chicken fajita filling, sprinkle with cilantro and more salt to taste and toss to coat.
Step 8
Serve filling warm in warm tortillas with desired toppings.
Make a Freezer Meal while Dinner is Cooking
Step 9
Make put another batch of fijita seasoning.
Step 10
Toss the sliced chicken breast in the seasoning. Add olive oil.
Step 11
Freezer bag time! Dump the chicken fajita mix into a freezer bag, top with the pepper and onion strips and do your best to squeeze all of the air out as you seal the bag to help prevent freezer burn.
Step 12
Freeze! We like to flatten the bag out as much as possible, so it’s easy to store. Frozen chicken fajitas will last for nine months in the freezer.
