Instructions
Step 1
Take out and prep the heavy cream to bring it to room temperature
Step 2
Finely chop the onion and mince the garlic
Step 3
Prep the can of tomato paste and vodka
Step 4
Heat the olive oil in a non-stick pan on the stovetop at a medium-low heat
Step 5
Once hot, sauté the onion for about 3 minutes until soft and translucent
Step 6
Add the garlic and pepper flakes, sauté for about 30 seconds
Step 7
Add the can of tomato paste and sauté for about 2 minutes, just until it starts to stick to the pan
Step 8
Kill the heat and add the vodka
Step 9
Stir until mostly evaporated and turn the heat back on to medium-low
Step 10
Add the oregano and cook for 2 more minutes then lower the heat to a simmer
Step 11
Slowly and in stages, stir in the cream. Go slowly as to not curdle the cream
Step 12
Turn off the heat and season with salt and pepper
