Instructions

Step 1
Preheat the oven to 200°C Fan/Gas Mark 7.
Step 2
Sift the flour through a sieve into a bowl and season with salt and pepper. Pour in the milk and egg mixture.
Step 3
Whisk well until the batter is smooth and the flour is incorporated. Leave the batter to rest for 30 minutes before using.
Step 4
Pour the oil into a large non-stick roasting tin and place in the oven for 3-4 minutes to heat up.
Step 5
Add the sausages and bake for 15 minutes until they Just start to brown, then remove the tin from the oven. Quickly. so the oil stays really hot. pour the batter into the tin around the sausages and put them back in the oven. Bake for 25-30 minutes until golden, well risen and crisp.

Onion gravy

Step 6
Meanwhile, make the onion gravy. Heat the oil in a frying pan, add the onion and cook for 5 minutes until it starts to soften.
Step 7
Add the flour and the sugar and stir to coat the onion. Pour in the stock and the Henderson’s Relish and season with salt and pepper. Leave to bubble away gently until the road in the hole is ready to serve.
Step 8
Serve the toad in the hole immediately with the onion gravy on the side.
