Instructions

Step 1
Preheat oven to 350. Spray a casserole dish with nonstick spray
Step 2
Cut the bell pepper and jalapeno into small pieces
Step 3
Heat the oil in a large pan over medium-high heat
Step 4
Add the pepper and jalapeno into the pan and sauté until cooked most of the way through. Add the ground turkey and cook until there is no pink left.
Step 5
On a clean plate, lay a tortilla flat. Spread a line of hummus right down the middle. Add a big spoonful of pepper and turkey mix on top and roll it like a tiny burrito.
Step 6
Lay each tiny burrito flat next to each other in the casserole dish so they are touching on the sides. When the dish is full spread the shredded cheese on top.
Step 7
Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 5 minutes so the cheese gets nice and melty. (I like to add a little hot sauce during this step)
Step 8
Remove from oven and serve warm.
