Instructions
Step 1
Place a large stockpot over medium heat. Once warm add olive oil. Then add diced onion, carrot, celery and minced garlic. Cook until fragrant, about 2-3 minutes.
Step 2
Add ground turkey and cook until browned, about 10-15 minutes.
Step 3
Add chicken broth, green lentils and diced tomatoes. Bring to a boil and cook for 40-50 minutes or until lentils are soft.
Step 4
Add salt and pepper to taste. Serve with rice, bread or pasta.
