Step 1
prep all spices and herbs in advance: garlic and ginger with sea salt in mortar and pestle; finely chop herbs; put saffron in small quantity of warm water; slice red onions; juice lemon and chop preserved lemon
Step 2
fry onion, add herbs and spices and lemons, place chicken pieces on top, sprinkle olives. Pour 500ml water or stock over.
Step 3
Allow to cook for 45 minutes. Serve with bread or rice
