Instructions

Step 1
Take the meat off the chicken and shred/chop into bite-sized pieces. In a large bowl, whisk together the sour cream, mayo, curry powder, and salt and pepper to taste. Fold in the chopped chicken, scallions, apple, cashews, and cranberries. Ideally chill for a few hours before serving (or can make the day before).
