Instructions
Step 1
Spray a non-stick frying pan (about 22cm across) with low calorie cooking spray and place over a medium heat
Step 2
Add the spring onions, seafood, garlic and stir-fry vegetables and stir-fry for 3-4 minutes or until piping hot
Step 3
Preheat the grill to hot
Step 4
Lightly beat the eggs, season lightly and pour over the fish mixture
Step 5
Fry for 2-3 minutes or until the bottom is hot, then finish under the grill for 1-2 minutes or until crispy and golden. Serve hot
