Step 1
1) Start by cutting the scallions into bite-sized pieces.
Step 2
2) In a bowl, combine the frying mix and ice-cold water. Stir well but not too long - otherwise, too much gluten will form.
Step 3
3) Add seafood mix and scallion (and chives) to the batter. Mix well.
Step 4
4) Heat a frying pan over medium heat and cook the pancakes until golden brown on both sides (the batter is thick and it will take a bit longer to it thoroughly cooked).
Step 5
For the sauce: 2 tbsp soy sauce 1 tbsp water 1 tbsp vinegar garlic chili pepper.
