Instructions

Step 1
season and shape 125g of beef for one patty less than 1cm thick, wrap in plastic and refrigerate for 30 mins
Step 2
chop the onion into strips
Step 3
put onion in oiled pan over medium heat, stirring often
Step 4
remove patties from fridge and put in a pan at medium-high for at least 4 minutes each side (may need up to 18 minutes if thick)
Step 5
flip patties for the last time and add cheese to melt
Step 6
warm brioche buns in pan
Step 7
remove patties from heat when cooked through and not pink
Step 8
serve with the onions, ketchup, and mayo (:
