This recipe has been in my family since before I was born. Mom used to slice open a sourdough bowl bread and place the tortilla inside like a sandwich.. Then she wrqp in aluminum foil and take it to the beach. Love, love, love it!!!

Instructions
Step 1
Pour and heat up enough oil in pan to cover the potato and onion mixture.
Step 2
Before placing potatoes and onions in pan, add some salt and mix everything well. Place the mixture in the hot oil and cook until tender and onions are transparent.
Step 3
Meanwhile, lightly beat the eggs in a big bowl.
Step 4
When mixture is cooked and tender, scoop the hot mixture into the eggs and quickly baste everything. (Be sure to do it quickly since hot mixture will slightly cook the eggs).
Step 5
When bottom is brown, carefully cover the tortilla with a large round dish or round pizza pan. Quickly flip the omelette, so the cooked side is up. Slide the uncooked side back into the pan till bottom is brown.
Step 6
Flip the tortilla back onto large dish or pan then serve.
