Instructions

Step 1
1. Preheat oven to 180 degrees 2. Dice onion and cut all veggies into small pieces 3. Heat olive oil in a large pan and fry onion and garlic until translucent 4. Add eggplant, capsicum and zucchini and cook for 5 minutes 5. Add the crushed tomatoes, chickpeas and chilli flakes and cook for another 10 minutes. Season with salt and pepper 6. Once cooked, transfer into a baking dish and sprinkle cheese on the top 7. Bake for 10-15 minutes until cheese has melted
