Instructions
Step 1
Slice & fry chorizo from cold pan to render out the fat. Remove with a slotted spoon.
Step 2
Cut chicken into large chunks. Brown in the chorizo fat over a very high heat. It does not need to be cooked thru. Remove.
Step 3
Add peppers to the pan & fry until soft. Crush garlic & add spices, fry for 2 minutes.
Step 4
Add stock & chopped tomatoes & scrape up the fond from the bottom of the pan. Add back the chicken & chorizo & add the rice.
Step 5
Cover & simmer for 25 minutes or until rice is cooked, add more stock as needed & season to taste.
