Black Bean Tostadas W/ Cilantro Slaw

Mashing the beans really opens up the flavor of the cumin. And the lime accented slaw with an herby-spike of cilantro adds a fresh, crisp texture to the tostadas.

Instructions

Step 1
Stir together beans and can liquid, cumin, and 1/4 tsp of the salt in a small saucepan over medium heat. Bring to a simmer and cook, stirring occasionally, for 2 minutes. Remove from heat, and mash with a potato masher until mostly smooth. Set aside.
Step 2
Toss together cabbage, cilantro, oil, lime juice, and remaining 1/2 tsp salt in a medium bowl. Spread black bean mixture evenly on tostada shells, and top with slaw mixture, radishes, and if desired, sliced chili. Serve with lime wedges if desired.
