Ingredients
4 servings
4 x 165gskinless chicken breast fillets
large, cut into chunks
1lemon
Grated zest and juice of
2 tspdried oregano
3garlic cloves
crushed
cooking spray

0.5cucumber
deseeded and cut into small chunks
2 sprigsfresh mint
leaves picked and finely chopped
0.5red onion
4gluten-free wraps
1Romaine lettuce
finely shredded
120gfat-free natural yoghurt
Instructions
Step 1
In a large non-metallic bowl, combine the chicken, half of the lemon zest and juice, the oregano and two-thirds of the garlic, then season to taste. Cover and transfer to the fridge to marinate for 2 hours or overnight
Step 2
Heat the grill to high. Put the chicken on the grill tray in a single layer and mist with cooking spray.
Step 3
Grill for 10-12 minutes, turning halfway through, golden and cooked through.
Step 4
Meanwhile, in a small bowl, combine the yoghurt, cucumber, remaining lemon zest and juice, mint and garlic, then season to taste.
Step 5
Put the wraps under the grill for 10 seconds each side, the top with the chicken, red onion, lettuce, and the yoghurt sauce. Roll up and serve.
