For the scones
440gall purpose flour
4 tspsbaking powder
½ tspsalt
1 Tbspgranulated sugar
100gbutter
unsalted, cold, grated
50gsweet pepper
finely diced
30ggreen onions
3garlic cloves
minced
1 ½ cupsmozzarella

200mlwhole milk

Step 1
Note: Grate your butter and keep refrigerated until you need it. It has to be very cold.

Preheat your oven to 375F
Step 3
In a large bowl, sift the flour, salt, sugar, and baking powder. Whisk to combine.

Add the grated butter and use your hands to work it in until the flour is well coated and crumbly.

Add the diced peppers, minced garlic, green onions, grated cheese, and Cheesoning. Give it a good mix.

Add the milk and egg. Mix with your hands until JUST combined.

Dump it onto a floured surface. Gather the dough with your hands until it comes together. Do not over knead.
Step 8
Flatten it out, cut into 4 pieces, stack them up, flatten again, and cut out your scones using a circle cookie cutter.
Step 9
Gather the excess dough and repeat the process until you run out. Makes 6.
Step 10
Place your scones on a baking sheet that’s lined with parchment paper.
Step 11
Whisk 1 egg with 1 tbsp of milk. Brush the scones.
