Step 1
In a large skillet, cook the bacon over medium high heat until crispy, about five minutes. Transfer to paper towels to drain, leaving the bacon fat in the skillet.
Step 2
Add the chicken to the skillet and cook, stirring, until opaque, 2 to 3 minutes. Stir in the onion, bell pepper, and garlic. Cook, stirring until the onions are softened, about four minutes. Add the tomatoes, black pepper, cayenne pepper, and salt. Bring to a boil and add the cauliflower. Cover and simmer until the cauliflower is just tender, about five minutes. Top with bacon and olives and serve.
