These ones are an easy throw-together type cookie. While they don’t have the typical butteriness of a baked cookie (they are more like a macaron), they are delicious and simple!

Instructions

Step 1
Preheat the oven to 180°C
Step 2
In a large bowl, mash the banana as much as possible. Stir in the coconut and coconut flour until a dough forms.
Step 3
Line a baking tray with baking paper. Shape into 10 or so cookies and place on the tray. Dot with chocolate buttons. Bake for 30 minutes or until edges are nicely golden. Leave to cool completely before removing from the tray. Store in an airtight container. These are fine at room temperature for a day or two, but after that, store in the fridge.
