Step 1
Get a wide based sauce pan and put it on a medium heat.
Step 2
Once hot, add your oil to the pan. When this is hot, add your diced chicken. You can test the temperature of the oil by placing a small piece of chicken in the pan. If it sizzles on contact then it’s hot enough.
Step 3
Add your salt and pepper to taste, and cook until the chicken has a lovely colour.
Step 4
Add your diced shallots and garlic to the pan and cook until the shallots are translucent and the garlic is fragrant (about 5 minutes).
Step 5
Put a pan of water on medium heat and add plenty of salt. Bring the water to a boil in preparation for your pasta.
Step 6
Slice your preserved lemon into small chunks and add this to your saucepan. Cook for a few minutes to really release the flavour.
Step 7
Add your pesto to your saucepan and mix, ensuring everything is properly coated.
Step 8
Add your pasta to your boiling water and cook until al dente (ideally for a minute or so less than specified on the packet).
Step 9
Place your yogurt in the saucepan and mix thoroughly, this will loosen the pesto and make a creamy sauce.
Step 10
Next, add in your tarragon and Knorr Italian herbs and mushrooms (if you can’t get hold of the Knorr herbs with mushrooms you can always use Italian herbs and dried mushrooms).
Step 11
Grate your Pecorino and Parmesan and mix together in a bowl. Add half to your saucepan and combine thoroughly. Reserve the rest of the cheese for serving.
Step 12
Add more dried mushrooms if desired and continuously stir the pesto sauce while you wait for your pasta.
Step 13
Once your pasta is cooked add this to your pesto, don’t drain the water off - make sure that you add 1-2tbsp (depending on desired consistency) this will ensure that your sauce sticks to your pasta as well as achieving a silky sauce.
Step 14
Mix altogether and serve immediately, add your cheese and fresh basil to serve.
