Instructions

Step 1
If using chicken breasts, rub with oil and steak spice and bake at 350 for 30 mins then shred. Also very good with shredded rotisserie chicken or leftover roast chicken. Heat oil in large pot. Add onion and sauté. Add garlic. Sauté until soft. Add spices. Add red pepper, tomatoes, and broth. Bring to boil then simmer 7 to 10 minutes. Stir in chicken, corn, and beans.
