For Pasta Dough
For Spinach Pesto
Instructions
Step 1
Blend all purpose flour with 130g of fresh spinach for a couple of minutes until it forms dough. Remove the dough and knead the dough into a ball and then a thick flat disc.
Step 2
In a pot, bring water to boil, season with 1tsp of salt. Cut pasta disc into small pieces to cook in the water until soft (when they float to the surface).
Step 3
In a blender, add in pine seeds, 1/2tsp salt, garlic cloves, parmesan cheese, 200g of fresh basil and olive oil to blend until smooth.
Step 4
Mix boiled fresh pasta with spinach pesto in a skillet for a minute, serve with additional parmesan cheese and a drizzle of olive oil and basil leave. Enjoy!
