Iron Rich Spinach Pesto Pasta (vegan & gluten free)

Once I make a recipe 5 times in the last few weeks I know have to share with you guys! This is SO easy to make and i can’t get over how delicious & nutritious it is!

Ingredients

Pesto Ingredients
1 bagspinach
1 handfulbasil
1 cupwalnuts
¼ cupBrazil nuts
1clove garlic
1lemon juiced
1 Tbspwater
1 Tbspolive oil
½ tspsea salt
Remaining ingredients:
Instructions
Step 1
Bring a pot of salted water to a boil and cook spaghetti according to package instructions.
Step 2
Add all over ingredients into a blender, if using a high speed blender use the tamper to push down as you go. Add another 1 tbsp of water if needed and blend until complete smooth.
Step 3
Reserve 1/4 cup of the pasta water. Add pesto to the drained pasta with reserved pasta water and mix until well combined.
Step 4
Top with ground pepper, chili flakes and grated Brazil nut or extra lemon juice. Enjoy!
