Instructions
Step 1
Preheat the oven to 200°C.
Step 2
Put the cauliflower into a small saucepan and pour over half of the milk.
Step 3
Bring to a simmer then cook gently for 10 minutes until the cauliflower is soft and most of the milk has been absorbed.
Step 4
Pour into a food processor, blend until smooth then season with salt and pepper.
Step 5
Meanwhile, melt the butter in a saucepan then add the spring onions and fry until soft.
Step 6
Stir in the flour, cook for a couple of minutes then gradually stir in the remaining milk until you have a smooth white sauce.
Step 7
Remove the pan from the heat, stir in the fish and peas then pour into an ovenproof dish.
Step 8
Spoon the cauliflower mash over the fish mixture then scatter the cheese over the top.
Step 9
Bake in the oven for 15-20 minutes until the sauce is bubbling round the edges and the fish is cooked through.
Step 10
If you prefer a crunchy topping, finish off under a hot grill for a couple of minutes.
Step 11
Leave to cool slightly before serving.
