Instructions

Step 1
1. In a bowl, mash chickpeas with a fork until roughly mashed.
Step 2
2. Add red onion, celery, parsley, vegan mayo, Dijon mustard, lemon juice, salt, and pepper. Mix until well combined.
Step 3
3. Assemble the sandwich by placing sprouts, chickpea salad, and sliced toma- to between two slices of butter lettuce. Add a serving of salmon on the side for added protein.
